1.Boil egg and potato well. 2.Heat oil in a pan. 3.Fry eggs.[ keep aside]. 4.Fry cumin,Bay leaves,Dried red chilli and green cardamom. 5.Fry chopped onion on low flame for 2 minutes. 6.Add 1/4 tsp of sugar for colour. 7.Add green chillies and chopped tomato.Saute for 1 minute. 8.Add potato pieces fry for 3 -5 minutes on medium flame. 9.Add turmeric powder,salt,cumin powder,chat masala and mix well. 10.Add onion paste,ginger garlic paste.Cook for 5 minutes. 11.Add sugar mix well. 12.Add egg pieces. 13.Add water(1/2 cups). 14.Cook for 10 minutes 15.Add garam masala powder. 16.Switch off the flame. 17.Garnish with green chillies,chopped coriander and cucumber( optional ). 18.Serve with fried rice or roti.
