ilish macher matha diye pui shak

 

(Hilsa Head with Pohi Greens)

Ingredients:--

 

1) Hilsa head(ইলিশ মাছের মাথা)- 2 pieces.
2) Mustard oil(সরষের তেল)- ½ cup.
3) Turmeric powder(হলুদ)- 1 tsp.
4) Salt(লবন)- 1 tsp.
5) Paste of mustard seeds(সরষে বাটা)- 3tsp.
6) Green chili(কাঁচালঙ্কা)- 3-4 pieces.
7) Dried red chili(শুকনোলঙ্কা)- 1piece.
8) Panch phoron(পাঁচ ফোড়ন)- 1 tsp.
9) Ceylon spinach(পুঁই শাক) – 350 gm.
10) Pointed gourd(পটল)- 4pieces.
11) Pumpkin(কুমড়ো)- 200 gm.
12) Brinjal(বেগুন)- 1 piece.
13) Potato(আলু)- 2 pieces.
14) Jack fruit seeds(কাঁঠালের বীজ)- 7-8 piece.
15) Sugar(চিনি)-2tsp.

METHOD:- 

1)Marinate the fish heads with a pinch of turmeric powder & salt.

2)Heat oil in a pan.Fry the fish heads till it become brownish.

 3) keep it aside.

4)Add dried red chili & panch phoron.

5)When the phoron look brown add vegetables.

6)Add turmeric powder & salt.

7)Add green chili and mix properly.

8)Stir well.

9)Add Ceylon spinach or pui shak.

10)Cover the pan and cook in medium flame.

11)After 10 minutes remove the lead and stir well.

12)Add paste of mustard seeds with 1 cup of water.

13)Add sugar and mix it.

14)Add hilsa heads.

15)cook for 7 minutes.
