Vegetable Fry Rice

 INGREDIENTS:

1) Basmati Rice- 5 cups.
2) Carrot- 1/2 cup.
3) Yellow bell papper-1/2 cup.
4) Red bell papper- 1/2 cup.
5) Green bell papper- 1/2 cup.
6) Beans- 1/2 cup.
7) Cauliflower florets-1/2 cup.
8) Ginger (chopped)- 1/2 tsp.
9)Cashew nuts-10-12 pcs.
10) Raisins- 20 pcs.
11) Bay leaf-2-3 pcs.
12) Green cardamom-3-4 pcs.
13) Clove- 3 pcs.
14) Cinnamon (1" stick)-2 pcs.
15) Refine oil-4-6 tbsp.
16) Ghee- 2 tbsp.
17) Sugar- 4 tbsp.
18) Salt- 1 tsp.
          

METHOD:-


1) Wash & soak the basmati rice for 15-20 minutes.
2) cook with enough water & a few of oil & 1/2 tsp salt.
3) Fluff and cool the rice thoroughly by spreading on big plates.
4) Heat 2 tbsp of refined oil in a karai.fry the cashew and raisins.keep them aside.
5) Add 3-4 tbsp of refined oil .add bay leaves.
6) Add all the veggies & mix well & saute in high flame for 3-4 minutes.Add 1 tbsp of ghee.add ginger.
7) Then mix rice.
8) Adjust salt, add oil & ghee, if required. Add sugar and garam masala & raisins.
10) The rice is ready.
