Begun Basanti( Pan fried eggplant) is a traditional Bengali veg recipe .This authentic and mouth watering recipe made with egg plant (begun),creamy mustard sauce and yogurt.Serve begun Basanti with steamed rice .

Ingredients:- 

1.Eggplants/Brinjals-2 big. 
2.Turmeric powder - 1tsp. 
3.Salt-1 tsp. 
4.nigella seeds-1/4 tsp. 
5.Red chili powder-1 tbsp. 
6.coconut paste -1 tbsp. 
7.Poppy seeds paste - 2 tbsp. 
8.Yogurt - 2 tbsp. 
9.Mustard seeds paste - 2 tbsp. 
10.Coconut milk - 1/2 cup. 
11.Sugar - 1/2 tsp. 
12.Green chilies - 5-7 pieces. 
13.Mustard oil - 1 cup.

Method:-

1.Rub on the eggplants with Turmeric powder -1/2 tsp & Salt -1/2 tsp.

 2.Heat mustard oil in a pan.

 3.Fry eggplants till golden in colour.

 4.Keep aside.

 5.In same oil saute nigella seeds.


 6.Add coconut paste.

7.Add red chili powder.

 8.Add Poppy seeds paste.

 
9.Add yogurt.

10.Turmeric powder -1/2 tsp.

11.Add salt - 1/2 tsp.Saute for 2-3 min..in medium flame.

12.Mix paste of mustard seeds With 1/2 cup of water (using strainer).

13.Add coconut milk.

14.Mix well.

15.Add sugar.

16.Dip the fried eggplants .

17.Cover it for 2 min..Remove the lid.

18.Add green chillies.

19.Begun basanti is ready .
